Filipino Adobo Recipe
Every
Filipino has a unique way of cooking this famous dish.
From
Chicken to Pork or mixed them both!
My
kids love it and I love it as well as it is easy and quick.
This
is a signature dish for Filipino that we can offer to any culture.
Here
is the common recipe for the Adobo dish
Ingredients
4 to 5
pounds chicken thighs (optional pork or mixed)
1/2 cup
white vinegar
1/2 cup soy
sauce
4 cloves
garlic, crushed
1 teaspoon
black peppercorns
bay leaves
Steamed
rice, for serving
Directions Option 1
- Combine the chicken thighs, vinegar, soy sauce, garlic, peppercorns and bay leaves in a large pot.
- Bring the chicken to a boil over high heat. Lower the heat, cover and let simmer for 30 minutes, stirring occasionally. Remove the lid and simmer until the sauce is reduced and thickened and the chicken is tender, about 20 more minutes. Serve with steamed rice.
Here is my
version
1.
Boil Chicken or Pork
2.
Drain but keep the stock
3.
Fry the chicken or pork till brown.
4.
Add on garlic and onion. Fry for a few minutes
5.
Add a cup of
the stock.
6.
Add Vinegar and Soy sauce.
7.
Bring to a boil
8.
Add whole pepper and bay leaves
9.
Add quail Eggs
Simmer for a
few more minutes till the sauce starts to thicken.
