Filipino Beef Caldereta

Caldereta (Filipino Beef Stew)

Ingredients
  • 1 kilo beef cubed
  • 3-5 pcs hotdog/sausage
  • 3-5 cloves garlic, minced
  • 1 medium size onion, chopped
  • 1/4 cup white vinegar
  • ¼ cup Soy Sauce
  • 2-3 tablespoon olive oil / vegetable oil
  • 1 tsp ground black pepper
  • 1 teaspoon salt to taste
  • 3 cups tomato sauce
  • 2-3 potatoes peeled and cubed
  • 1 cup green peas
  •  1 green or red bell pepper/capsicum
  • Optional: green olives, carrots
Directions
  1. Combine beef, hotdog/sausage, garlic, vinegar, and soy sauce in a skillet over medium heat; cook and stir for around 15-20mins until beef is browned and liquid is reduced. Remove from heat.
  2. Heat olive oil in a pot over medium heat; cook and stir onion and green bell pepper in the hot oil until onion is translucent. Add tomato sauce and simmer until liquid is slightly reduced
  3. Stir beef-hotdog mixture into tomato sauce mixture; bring to a boil. Reduce heat to medium-low, cover pot, and simmer for 30 minutes
  4. Stir potatoes, peas, salt, and pepper into stew; simmer around 25 – 30 minutes until beef is tender and potatoes are cooked through
  5. Add water if needed.
