Caldereta (Filipino Beef Stew)
Ingredients
- 1 kilo beef cubed
- 3-5 pcs hotdog/sausage
- 3-5 cloves garlic, minced
- 1 medium size onion, chopped
- 1/4 cup white vinegar
- ¼ cup Soy Sauce
- 2-3 tablespoon olive oil / vegetable oil
- 1 tsp ground black pepper
- 1 teaspoon salt to taste
- 3 cups tomato sauce
- 2-3 potatoes peeled and cubed
- 1 cup green peas
- 1 green or red bell pepper/capsicum
- Optional: green olives, carrots
Directions
- Combine beef, hotdog/sausage, garlic, vinegar, and soy sauce in a skillet over medium heat; cook and stir for around 15-20mins until beef is browned and liquid is reduced. Remove from heat.
- Heat olive oil in a pot over medium heat; cook and stir onion and green bell pepper in the hot oil until onion is translucent. Add tomato sauce and simmer until liquid is slightly reduced
- Stir beef-hotdog mixture into tomato sauce mixture; bring to a boil. Reduce heat to medium-low, cover pot, and simmer for 30 minutes
- Stir potatoes, peas, salt, and pepper into stew; simmer around 25 – 30 minutes until beef is tender and potatoes are cooked through
- Add water if needed.
