My Version of Gourmet Tuyo


Ingredients:

Approximately 20-25 pcs Tuyo
2 cups Extra Virgin Olive Oil
1 cup white vinegar
5-8 pcs carrots
15 gloves of garlic (the more the merrier)
Salt and lots of pepper
Optional: Chilli

Direction:

1.      Cut Tuyo fish into half, taking off the bones, head and scales. Set aside
2.      Cut into small cubes the carrots. Set aside
3.      Mince the garlic. Set aside
4.      Fry the Tuyo till crispy. Transfer to plate with paper towels to remove excess oil
5.      In a big saucepan, on medium heat add on the olive oil, bring to boil,
6.      Add on garlic, let it boil on the oil for a few minutes.
7.      Add on the carrots
8.      After a few 2-3 minutes add on the tuyo
9.      Add on the white vinegar
10.  Salt and pepper to taste
11.  Simmer for another 3-5 minutes till the carrots are tender.
12.  Chilli is optional.

Great with hot rice to serve!!!
