Beef Burgers with Caramelised Onions
Ingredients:
2 red onions, thickly sliced
2 tbs caster sugar
2 tbs red wine vinegar
500 grams pack Coles Beef Thyme & Parley Burgers
4 slices tasty cheese
4 bacon rasher, trimmed
4 brioche burger bunn, split, toasted
1 tomato, thickly sliced
Paprika Mayo
1/4 cup whole egg mayonaise
2 tbs reduced fat sour cream
1 tbs meon juice
1 tsp smoked paprika
Direction:
1 Heat a barbecue flat plate or large frying pan on medium -low. Cook the onion, turning occasionally, for 15 mins or until very tender. Sprinkle with sugar and vinegar. Cook, turning occasionally for 5 minutes. or until the onion caramelises. Transfer in a bowl.
2. Heat a barbecue grill or chargrill on medium-high. Cook burgers for 4-5 minutes each side or until cooked through. Top the burgers with cheddar slices and cook., without turning, for 1 minute or until cheddar melts. Transfer to a plate.
3. Meanwhile, cook the bacon on the grill for 1 minute each side or until crisp.
4. To make the park mayo, combine the mayonnaise, sour cream, lemon juice and paprika ina small bowl. Season
5. Divide the bun bases among serving plates. Spread bases evenly with the mayonnaise mixture and top with the lettuce, burgers, tomato, bacon and caramelised onion. Top with the bun tops and serve immediately.
