 Ginataang Alimango


Ingredients:

6-7 crabs, washed

6 cups water for steaming 

cooking oil

1 medium onion, chopped

5 cloves garlic, minced

1 thumb size ginger, julienned

6 pcs Thai chilli pepper

1 tbsp fish sauce (patis)

4 cups coconut milk

1 bunch long beans

1 cup coconut cream

salt and pepper to taste


Directions

1. under cold running water, wash crabs well. Place crabs belly side down in a pot filled with water. Spinrkle with salt to taste. Over mediium heat, boil crabs for about 20-30 minutes or until color changes to orange. remove from heat.

2. Heat oil in a wide pan or skillet over medium heat. Add onions, garlic and ginger and cook until limp and aromatic. Add chili peppers and cook for about 30-40 seconds. Add fish sauce and cook for about 1-2 minutes.

3. Add coconut milk and simmer until reduced. Add string beans and cook for about 2-3 minutes.

4. Add crabs. Add coconut cream and stir to combine. Continue to cook, regularly spooning sauce over crabs, for about 8-10 minutes or until sauce is thickneded and vegetables are cooked but firm. Season with salt and pepper to taste.

5. Serve hot and enjoy
