 Pancit Habhab



Ingredients:


500grams miki lucban, or fresh miki noodles

1 medium white onion, sliced 

cooking oil

2 cloves garlic, chopped

3/4 cup pork belly, sliced

1/2 cup shrimp, peeled

1/2 cup pork chicharron (prok rinds), crushed

1/3 cup sayote (chayote), julienned

1/4 cup carrot, jullienned

1/4 cup peas

2 tbsp fish sauce (patis)

1/4 cup bok choy (chinese leafy cabbage, sliced salt to taste


Instruction:


1. If using fresh miki noodles, rinse noodle in hot water before using.

2. Heat oil in a wok over medium high heat and sauce onions and garlic. Add the pork belly to the wok and cook until lightly browned, then add shrimps and cook for another 2 minutes

3. add the sayote, carrots, peas, chicharron, soy sauce, vinegar and patis. Mix well and bring to a simmer. Add the noodles and bok chow. Toss well then season to taste.

4. Serve hot and enjoy.
