Pinakbet


Ingredients:

4 round eggplant, quartered

2 small ampalaya (bitter melons), quartered

1/2 bundles string beans, cut into 2 -inch lengths 

1 sweet potato, quartered

8 pieces okra, sliced

1 tomato

1 inion, cubed

1 1/2 cups water

1/2 kilo lechon kawali

1/4 cup bagging (anchovy sauce)


Directions

1. Boil water in a large pot

2. Put in bagoong and wait for the mixture to boil once more

3. Add in the vegetables starting with the sweet potato then okra, ampalaya, eggplant, string beans, tomato and onion. Simmer for 15 minutes

4. Add the lechon kawaii and simmer for 5 minutes

5 Serve hot and enjoy
