 Strawberry Sinigang


Ingredients:


1/2 kilo prok belly, sinigang cut (square)

1 cup unripe sampaloc (tamarind), boiled

1 bundle kangkong (water spinach)

2 medium eggplant, sliced

1 labanos (daikon radish), peeled and thinly slided at an angle

6 cups rice wash (water from washed rice or just water)

2 cups strawberries, halved

1/2 cup strawberry, garnish upon serving

1 medium tomato sliced

2 pieces siling haba ( long green chilli pepper)

2 tbsps patis ( fish sauce)

salt and pepper to taste


Direction:

1. n a large cooking pot, pour rice wash( or water) and boil pork meat. Cover the pot and let it boil then simmer for about 30mins to become tender.

2. using a strainer and fork, mash the boiled tamarind, squeeze out the juice and pour into simmering pork. Stir well (you may also use instant Sinigang mix if sampaloc is not available)

3. Season with a pinch of salt, pepper and patties. Toss in labanos slices. Continue to simmer for about 3-4 minutes.

4, Add in eggplants, tomatoes, siling haba and strawberries. Simmer for another 3 minutes.

5. Finally, add in kangkong leaves and simmer for another 2 minutes. Cover the pan and turn off heat. Transfer into a bowl and garnish with strawberries.

6. Serve and enjoy
