Biko Leche Flan

BIKO LECHE FLAN



Ingredients:

Biko

1 cup malagkit 

3/4 cup water

1 1/4 cup coconut milk

1/4 cup white sugar

pinch of salt

1/2 teaspoon ube essence

Leche Flan

4 medium egg yolks

1/3 cup condensed milk

379 ml evaporated milk

1/2 teaspoon vanilla essence

1 teaspoon agar agar powder or plain gelatin powder




Direction to cook biko:

1. Wash the malagkit rice twice.

2. Add 3/4 cup water

3. Cook in low heat. scrape and loose down from pot.

4. In a pan, add coconut milk, sugar, salt, ube essence. cook in high heat bring to boil.

5. Then add the cooked malagkit rice, turn heat to low

6. Stir continously until liquid absorbed


Yield 4 in a 4 inch diameter container


Direction to cook flan:

1. In a bowl, add the 4 yolks, condensed milk, half of the evaporated milk mix well.

2. Add vanilla essence and agar agar mix well

3. add the rest of the evaporated milk.

4. Bring to boil in medium low heat stirring continously.

5. Add on top of the biko in the container.



Topping: 

Melt 1/2 cup of  white sugar in medium low heat.

Mix in 1 tablespoon cornstarch in 1/2 cup water

Once the white sugar started to melt and turn golden brown and starting to boil

Add the water-starch mixture slowly and continously stirring

Stirr till mixed well and glossy.

Pour on top of the biko flan .
